Sinangag Anyone?

GOOD MORNING, EVERYONE!!!!!

Yes, hyper ako ngayong umaga even if I had no adequate sleep last night. My mind just ran away with me. Ayan, walang tulog, pero hyper. Deadly. Hahaha!

Tis now 9am. Perfect time for Saturday breakfast, or so my body clock says. 

Perfect time as well for SINANGAG (Fried Rice)! But since it's Saturday, it has to be special. It just gotta be.

Start your day right with heavy breakfast. Prepare SPAM AND SCRAMBLED EGG FRIED RICE WITH MUSHROOMS. Title pa lang busog ka na. :-)

Serves 2
Prep Time 5 minutes
Cooking Time 10 minutes

Ingredients:
  • 2 tablespoons canola or olive oil (or any vegetable oil)
  • 100 grams Spam, diced (that's about 1/3 of a Spam can)
  • 1/2 cup fresh or canned button mushrooms, diced (or sliced, depending on how big you want it)
  • 2 cups day-old rice (or pinasingawan na kaning bagong luto para di masyado basa. Amen, may solution sa lahat!)
  • 2 chicken eggs, lightly beaten
  • salt and ground black pepper to taste
  • chopped parsley (pang-arte and pambigay-kulay)
I suggest you add the following to make it a healthier version:
  • 1/2 cup carrots, diced
  • 1/2 cup green peas or 1/2 cup green beans (I use Baguio beans), cut into small bits

Cooking Procedure:
  1. Heat oil in wok or skillet. (I tried doing this in a medium-sized pan. FAIL. Do not attempt. It's hard to mix! Promise! Hahaha!)
  2. Add rice and mix well.
  3. Add eggs and mix well (so that the rice will become yellowish with little clumps of eggs. If you don't mix well, it's just one blob of egg on the rice. Omu-rice ang effect, unless that's what you wanna achieve. :-P)
  4. Mix the other ingredients . MIX WELL to make sure ingredients are (almost) evenly distributed. (I have emphasized that enough I think.) 
  5. Season with salt and pepper.  (If you're not sure how much salt or pepper you need, put it little by little. It's more possible -- note the term -- to just add, than lessen what you put. Goodluck naman dun.)
  6. Garnish with parsley. (Sabi sa yo, pampaganda lang yan. At least edible ornament. Haha!)
