Review of Challenge Accepted

Remember my post CHALLENGE ACCEPTED? I promised to share with you the experience of cooking these recipes for the first time:
 

1. SPINACH AND BACON FRITTATA


I prepared this for breakfast as a request from Edward. I liked that it has that amount of spinach to somehow "cleanse" the bacon. Para kunyari hindi guilty sa bacon. Haha!

Tip for future cooking: Line the pan with wax paper or drizzle it with a little oil before you put it in the oven or turbo. 

I had a hard time taking it out the baking pan without destroying its shape. Good thing I still had enough decent portions to feature here. Baka naging omelette yun at hindi frittata. Haha!

Look how cute their "mats" are! But just so you know, the pans and plates easily slip on this. I'd rather just have it there for aesthetic purposes and not use them. At all.

Greek Salad

Gah! Sorry about this 45-minute late post. I promised to post it Friday, but I got caught up in the things and activities I had to attend to. Just wanna share this before I sleep pre-Baguio trip. (Yes! It's today na! Woooohoooo!)

Anyhoo, on to the recipe of the Greek Salad.

This salad is just right. Not sweet, not salty, not fruity, not halaman-y. Just right. :-)

Basil Creme Penne

As promised I will share the recipe today. Nakahabol pa ako! :-)



 

Serves 3  
Prep Time 20 minutes  
Cooking Time 20 minutes
 
Ingredients:
  • 400g penne or ziti (pasta)
  • 2 tbsp olive oil (or any vegetable oil)
  • 50g ham, sliced
  • 1 pack Knorr Complete Recipe Mix - Ginataang Gulay
  • 1/2 cup water
  • 1 cup all-purpose cream
  • 8 fresh basil leaves
  • ground black pepper
 Cooking Procedure:
  1. Cook pasta according to package directions. (Penne and ziti usually takes 10-12 minutes to cook. No better way to check if the pasta is cooked than to bite it. If the pasta is firm but doesn't stick to your teeth, it's cooked. If it sticks to your teeth, cook for another minute and check again. DO NOT OVERCOOK. 'Wag nyo na gawin yung ibato-sa-dingding-pag-dumikit-luto-na method. Please. Haha!)
  2. In a different pan, saute tomatoes and ham in oil.
  3. Dissolve the Ginataang Gulay mix in water. Add to the pan, then simmer until thick.
  4. Reduce heat then add cream. Stir a few times.
  5. Add cooked pasta and basil leaves. 
  6. Add ground black pepper to taste.
  7. Cook for another 3 minutes. Mix continuosly.
Note that the Ginataang Gulay mix gives it a taste of coconut milk (gata). If you're not fond of gata, use cow's milk instead. :-)

I packed this pasta with the Greek Salad (abangan sa Friday!) for Edward's lunch. He texted, "And sarap ng lunch ko! Nawiwili ako, baby!" Awwwww. Dying from kilig now. *blush* :-)

Up Early Than Usual



GOOD MORNING!!!

Just so everybody knows, I LOVE SLEEPING but, I'm up quite early than usual today. :-)

So many things to do on this Sunday:
  1. shop for groceries
  2. claim my FREE high-quality frying pan with lid (Weeeeee!!!!)
  3. family lunch to celebrate my Mom's birthday (I love you, Ma! Happy birthday!)
  4. choir rehearsal (Yes, I serve in the church :D)
  5. Sunday mass (Hear mass today, friends.)
  6. prepare dinner for two (Yes, my Sun-date)
  7. prepare baon for two (Lucky this love of mine -- he has free breakfast, snack and lunch every Monday! Haha!)

My Lunch Revealed: Sliced Chicken Provencale

Here's the recipe of what I cooked for lunch -- SLICED CHICKEN PROVENCALE. No worries, cooking it is not as complicated as its name! :-)



Serves 1
Prep Time 5 minutes
Cooking Time 15 minutes

Ingredients:
  • 120 g chicken cutlets (preferably breast)
  • 1 pc onion, sliced
  • 1 cup peeled tomatoes in juice, diced (I use 1 can of whole peeled tomatoes)
  • 1/4 tsp paprika
  • 1/4 tsp dried thyme
  • 1/4 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • cooking oil
I suggest you add the following to make it a healthier version:
  • 1 small can of green peas

Cooking Procedure:
  1. Cut chicken into regular pieces. (I just cut the breast in half, then slice it a bit on top -- parang pag nag-slice ng hotdog na may slits. Basta yun. I'm sure you get what I mean. Haha!)
  2. Heat oil in a non-stick skillet.
  3. Saute onion until translucent. (I love this smell!!! Ang bango!!!)
  4. Add the chicken, browning them on all sides.
  5. Sprinkle the chicken with paprika, thyme and oregano. (Ako wala nang sukat-sukat, taktak here and there lang.)
  6. Reduce heat, then add diced tomato and a little juice. 
  7. Cook for 5 minutes. 
  8. Add the green peas and cook for 5 more minutes, or until the tomato juice dries a little.
  9. Add salt and pepper after cooking.

Oh, some trivia here. PROVENCALE (pronounced as pro-ven-sal) means cooked, usually in olive oil, with garlic, tomatoes, onions, and herbs. Ayun naman pala! Yun nga naman ang pagkaluto nito! Bongga!

GOOD MORNING, EVERYONE!!!!!

Yes, hyper ako ngayong umaga even if I had no adequate sleep last night. My mind just ran away with me. Ayan, walang tulog, pero hyper. Deadly. Hahaha!

Tis now 9am. Perfect time for Saturday breakfast, or so my body clock says. 

Perfect time as well for SINANGAG (Fried Rice)! But since it's Saturday, it has to be special. It just gotta be.

Start your day right with heavy breakfast. Prepare SPAM AND SCRAMBLED EGG FRIED RICE WITH MUSHROOMS. Title pa lang busog ka na. :-)
