Serves 1
Prep Time 10 minutes
Cooking Time 30 minutes
Ingredients:
- 120 g pork tenderloin
- 1/2 cup broccoli, chopped
- 1/2 cup carrots, thinly slice
- 1 pc red bell pepper, cut into strips
- 1 stalk spring onions, chopped
- 2 pcs garlic cloves, minced
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp fresh ginger
- Aluminum foil
Cooking Procedure:
- Remove most of the stems from the broccoli (leaving mostly the flowering part).
- Preheat grill. Place tenderloin on hot grill and sear the outside making good grill marks.
- Grill about 10 minutes.
- Slice tenderloin into 1/4 inch slices.
- Place the pork, broccoli, red pepper and onions in the center of one piece of foil.
- Season with soy sauce, sesame oil and ginger. (I marinated the meat in the mixture for a quick 5 minutes before I put it with the other ingredients. It makes the flavor stick to the meat more.)
- Fold and seal foil. Place on hot grill for 10-12 minutes.
Btw, this has much vegetables because it's for a diet program. You can always lessen the veggies, but why would you? It's good for your health. :-)
